It’s a circle we’ve been working hard on squaring, and the answer is an old one; ice. Without the need for any 'artificial preservatives or 'modified atmosphere’ packaging, we freeze our meat - rapidly and safely - as soon as it has been butchered.
Freezing slows down the process of food breakdown, locks in important nutrients and reduces development of any harmful bacteria. Because it’s vacuum packed and frozen so quickly, it's got a longer life once thawed and can even be re-frozen.
Locking in flavour & texture
In many different areas of food production, from seafood to fruit, freezing is used to lock in quality and maintain an ideal state. At Wild by Nature we hang and dry age every animal. Through this ageing process, the water content of our meat is significantly reduced. This leads a product which freezes well and contrary to popular belief, has no noticeable effect on the texture of the meat. We know this because we’ve tried and tested it ourselves. So when our meat is just right we pack and freeze, to keep the quality at it’s best.
Reducing food waste
We have made it our mission to producing food in a way that is better for us and the earth. We look at every step along the way, from farm to table, and the last thing that we want to see in this process, is anything go to waste.
We are committed to whole animal butchery. As a small scale producer this means that when an animal comes from the farm and on to the butchers block, we use every part of the animal, nose to tail, using bones in broths and rending down fats to use in our cooking. It also means that we have a window of opportunity for keeping that animal at its optimal state. So we use ice to preserve our meat, at the time when the quality at it’s very best.
We want to help people who support our methods, to reduce reduce waste too. We do this by packaging our meat in individual portions, so you can take only what you need from the freezer each time.
You can even safely defrost and freeze your meat from Wild by Nature. Contrary to popular belief, that 'you can’t re-freeze meat once it has defrosted. When meat has been grown carefully and properly, and as long as it is kept at a safe temperature (below 5c), it is completely safe to defrost and re-freeze good quality meat. We’ve designed our packaging to make sure that that safe temperature is maintained all the way from us to your door.
How to store your meat at home
All fresh meat from Wild by Nature will arrive frozen. Once you open the package put any frozen items straight into your freezer for storage and consume before the best before date on the pack. Once thawed, consume within three days.
If you would like to defrost an item let it defrost in the fridge for 24 hours before using. Then simply remove the packaging once defrosted and follow the cooking instructions.
